I know this is an old topic, but I thought I would add this to the knowledge base.
We used to rinse with wine after rinsing the cure with water to remove more of the salt. The wine would pull out more salt with two quick rinses. Put some wine in a bowl, dredge the cappa through the wine several times, change the wine and repeat.
