Welcome aboard! The beef sounds wonderful!…as is. It’s a real shame they were cut into 1 KG portions (2.2#). Unless you are willing to try not trimming after aging then you will be losing some tasty beef.
By any chance did the pieces come separately vacuumed in cry-o-vac packaging?
Personally I would not place more than 1 KG per UMAi Bag. My rationale is butting the ends together risks contamination issues.
How long do you intend to age them?
