Yes each piece is separately cryo-vac’d.

the bags are big enough that I could put one piece up one end of the bag and the other towards the other end and they would be separated by a good 10cm of space which I assume the bag will collapse around?

I was thinking of aging for 28 – 35 days. Maybe take one bag out at 28, then the second 35 ish. Thoughts ?
