Welcome aboard Darrin!
Don’t worry – we are gentle here and welcome questions as well as sharing personal experience stories!
I can’t say as I have ever seen or heard of any one trussing their meat before slipping it into the bag. However, I have seen pictures of people slipping a portion of butcher’s netting OVER the UMAi Dry® bag once the meat has been bagged…so that is half way comparable.
One bit of advice though is not to dry the surface of the meat before bagging. Any “goo” helps the bag adhere to the meat better and quicker.
How long do you plan to age it?
