We recommend a fridge that is in regular use. Only opening and closing ensures that the fridge is managing the draw away the CUPS of water that the meat releases while dry aging. No fans or salt will provide this function. Only a “regularly used modern kitchen frost free refrigerator in regular use.”
Frankly, if someone wants to tuck the meat away and forget it, best they dry age “commando” rather than with UMAi Dry®. People are constantly trying to combine techniques—but UMAi Dry® is just the one simple process.
