No need to reseal. Moisture is the trick, so it just wastes a bag to try and re-bag.
The fat cap doesn’t release moisture, so it often loses bond first. If you have good contact on the larger meat side on the bottom, go ahead and turn it over. Moisture will gravitate to the opposite side. You may it may not get a bond with the fat cap. No problem. UMAi Dry® is not a vacuum bag. Air pockets do not pose a risk.
