I started with the prime. I know it cost more, but I figure if it is going to be taking up space in my fridge for a long time and I am going to want to have the best steak possible, then I better start on the right note. I bought both of mine from Costco. Rib eye prime about 15 lb in now 46 days and new York strip 15 lb in now almost three weeks. Next time I plan on trying an angus ribeye prime from restaurant depot if they have them.
