Well, Sir, have you done the smell test? Remember though dry aged meat will smell earthy or nutty – but “not drive you up the wall rotten!” What you describe could be a problem since that garage refrigerator was not wicking off the moisture as that meat aged. That explains the softness and color situation. At this point if there is no rotted smell you probably will be OK
