28 days will be better than no dry aging, but 28 sure won’t give you a “knock your socks off” results that 45 days will. As for trying to cut it open and remove 1/3 I still say it will be difficult to do. Once the meat continues to dry it bonds with the UMAi Dry® bag and is difficult to separate without tearing…but it’s your meat your bag so give it a try…good luck!
