The meat was in a sealed plastic bag of sorts at the butcher. The butcher opened the bag and cut off this 6lb piece for me. I don’t know if it was a sterile cryovac bag.
I’m sure hoping the entire piece isn’t ruined. As I said in my previous post I’ve never dry aged a ribeye cut if half before.
Perhaps that is why I am getting mold..
