Oh, boy…I hate to tell you this but that meat is probably stinking because it has gone bad! My guess is it was bad to start with…had you purchased it from a display case instead of the sealed in cryovac package which we highly recommend? Then when you moved it to the beer fridge that just made matters worst. Air circulation doesn’t mean the necessary moisture extraction which is a must! A modern, frost free refrigerator wicks off the moisture as the meat dry ages. Otherwise the meat just lays there and rots. Sorry…
