Is it possible to have too much blood/ liquid in the sealed bag?

Gotta wonder about where and how you purchased that “chunk-o-cow”! LOL

Was it still in a cry-o-vac bag? If so, then did you drain it at least some before sliding the meat into a UMAi Dry® bag?
