For a first try, usually I would recommend a boneless ribeye. But if you’ve got a sirloin, start with that. Just look up the proper way to stake out the sirloin afterward. There are two separate muscles that cross at a 90° angle to each other.
As for aging the brisket, that’s a whole different application, but you should love the results.
