Cutting the bag in half would be less problematic, but that does mean you MAY have sealing issues. The problem with butting two pieces together in the same bag is any bacteria on those two butt ends mashed together can multiply and ruin your meat from within. Meat itself is actually sterile internally…the surface of the meat is where the bacteria can lurk and reek havoc and you won’t even know it until the end of the aging.
