Unless your bag looks like a balloon – you should be fine – air pockets can occur – especially when the meat has been deboned and there are hills and valleys in that side of the meat. In the future you might want to consider the paper clip trick or raft to keep the bag from prematurely collapsing and sealing. Also binding the bag to be sealed with a piece of women’s’ panty hose or butchers’ netting will also help remove the air pockets. Good luck and BTW what does the term scotch mean?
