Hi Ron, we have had excellent results with it using a 35 day aged steak. There is still moisture there to deal with, perhaps reducing the salting time. I will try to remember to send some pictures next time. I will certainly keep this in mind when pulling the next ribeye out since it will age for 45 days tho.
