I generally leave my Montreal Seasoning on the dry-ages steaks about 20 minutes or so. There is much less water to work with, so this technique is not as effective as an off-the-shelf steak. IMO, it does draw the seasonings a little deeper than just the surface, but with a dry aged steak, the flavor does not need much help, and the meat is already pretty tender.
