I made at least a mental note to myself that I’d take better pictures of the raw Sirloin next time to note the grain direction. I mean while the color changes and the meat shrinks it doesn’t lose its basic shape characteristics. Furthermore I don’t see why it would hurt anything to TRY using a Magic Marker on the fat cap to map grain direction- knowing it will be cut off anyway after aging.
