No pictures to post, but last night’s steaks were tender and tasty. While steaking out the primal the very noticeable thing I had failed to mention was there was next to zero marbling. I wonder now that with the narrowness of the meat along with no marbling that the meat merely had less resistance to drying out and therefore the 25% weight loss occurred.
