OTOH you can also use a section of women’s panty hose on the outside of the bag once you have the meat in the bag. Another trick is to ask your butcher for some “butcher’s netting” and you can use it repeatedly as well over the years. Now that you are sealed, but with air bubbles you can make a small slit in a corner and using a drinking straw suck the remaining air out that you were not able to massage out. Then quickly and tightly secure the opening with a bread twisty. Ron
PS remove the panty hose or netting during the aging. Some people like to leave it on for a few days until the bond has occurred, nut then remove it.
