Hello, and sorry it took a bit to get to you with an answer.
We don’t want to pretend to know everything about this process, and are learning as we go. We did find some sort of “folk” recipes that mention rinsing the cure off with a cheap red, but more often they suggest using a red wine as an ingredient when making a salumi.
Sorry we don’t have a good answer–but we hope that you can share your results so we know if you noticed how the wine made a difference in the results.
