I have asked this before and no one wants to answer this. I think it will last a while. Once it is dried out, I think it has a reasonable shelf life if you store it in the fridge. If you freeze it in a vacuum bag, it should last a long time. I am not an expert, and am experimenting with this. I just shaved the same Bresola off and ate some tonight. Still tastes good. Yum. I store it in plastic wrap in the fridge. I think if it smells good and tastes good, it is probably ok. I have done the same thing with my capicola. Proceed at your own risk, of course.
