Thanks Rocky! I like to shop SAMS early in the week when it is less crowded and typically they have just replenished their meat bins from the weekend. Then I may have a couple dozen sub-primals to sort though taking my time to study the large end of the package for marbling. It’s not a science but you can get a pretty good idea what is inside. Our SAMS does not carry prime so I feel if I’m going to spend 35 to45 days aging the meat then no need to rush the election process. Even if there aren’t many available in the bin I’ve been known to ask to see what they have in the back cooler and they will roll the mother load out for me to choose through! Ron
