Ben, my method isn’t foolproof, but if you inspect the large end of the sub-primal you can get an idea on the fat veins running through it lengthwise. The cryovac doesn’t always give you a clear view, but I have found that no or little marbling is very obvious! Maybe my method is nothing but luck enhanced by the number of packages I get to sort through. HTH. Ron
