Ideally I try to allow 48 hours to thaw frozen steaks by keeping them in the refrigerator. OTOH 4+20 is my more normal practice! That’s 4 hours sitting out on the counter and then slip into the refrig for 20 hours. Seeing I almost always “hot tub” now even if my steaks were slightly frozen at the end of 24 hours they are fine by the time they hit the grill.
As for home freezing vs. commercial flash freezing I’ve never heard anything against home freezing.
