Hello, I did a prosciutto in September it was ready before Christmas , I vacuumed it n food saver bags I just opened the last package this past weekend, it was still great.that was stored in the refrigerator . I have also frozen salumi and capacola in food saver bags, I feel the taste and texture hold their quality. I store what I’m eating on in parchment paper in a ziplock. Hope this helps.
