Joseph, by no means am I a refrigerator expert but let me see if I can help you with what knowledge on aging that I have. When you say this second unit is not frost free, I am assuming it is an older model and from time to time you do need to defrost it – right? What makes a newer one frost free (remember I’m no expert!) is the moisture is removed out of the box by a type of heating cycle. Your use of an auxiliary fan sounds like a good idea and I know it has worked for others here. Another issue that will help is at least daily if you will open and close that refrig door – not to leave it standing open, but not a quick open and close either. That will cause the compressor to kick in as the air gets exchanged. This is the same reason using the normal kitchen refrig works for aging meat since the door gets openned and closed several time and the air is exchanged. Does this help? Ron
