Sorry about your sealer, hopefully it had a long and productive life. The sausages really don’t have to be sealed at the ends since the casing has been stuffed tight. We demonstrate this because most people already have a sealer handy and this is a fairly quick way to close the ends. You salami should be fine without the vacuum step.
As for sealer recommendations, this site has a section on the home page called “Not all sealers are equal”, if you click on this it will show the types of sealers that are best to use with UMAi Dry.
If you have a Target store nearby, they may carry a Foodsaver V2244 for around $80 (this model works with UMAi Dry), or of course you can purchase one on this site which is the V2460 model. The difference is the Foodsaver V2460 has a roll cutter and holder for regular Foodsaver material as well as the moist function that helps to get a better seal on UMAi Dry.
