Good job, Randy! Thanks for sharing. Are you open to some advice? I noticed in picture #4 that you painstakingly trimmed up and down the valleys where the bones had been removed…I have found it easier and actually quicker to steak out my aged primal and then trim the individual steaks. Personally I think I even have less trimming loss that way too.
Also out of curiosity what is this “Pro” you mentioned…a grill or what?
