Thanks for the advice, as I was trimming I thought there has to be an easier way and I thought that “steaking” it out first would better, I will try that next time
The “Pro” is a Memphis Pro Pellet grill …….cooks a GREAT steak
Oh I almost forgot , I rendered a bunch of the fat and trimmings down and am going to pour this on the steak while I am cooking it YUM
