Thanks, Ben. Based on your initial post saying you started at 13.75 and now of losing “about 3 pounds” that calculates out to about 21.8%. My personal experience with strip loin sub-primals of similar size has been 21.4 % for 35 day as well as 45 day aging. Looks to me like that chunk-o-cow must just have so much tasteless water to give up period. OTOH your extra 15 days added to the tenderizing aspect of dry aging for sure! Please report back when ever of how you liked them!
