My son spent 13 years in the US ARMY, Got out last Oct and been studying at Le Gordon Bleu Boston since Nov. He also is a member of a waterfowl hunting team in NEPA and has lots of goose. Bout 4 years ago i processed 250 lbs for the team, jerky, summer sausage, bologna. Really got tired of seeing it. Started making goose pastrami for them, they really liked it.
