Thanks for sharing, BigAl. You and I have already been over this topic but let it be said what is one man’s trash is another man’s treasure! I love the dense meat that you trimmed off. That’s the purpose of dry aging – kinda like saying why bother aging if you are going to just throw it away anyway! That part sears well and is mellow – but I know to each his own!
