Blair – at 20 pounds and bone in you will need to take precautions so the bone doesn’t puncture the UMAi bag from the get go, or any time you handle it. If it were me I’d probably cut that sucker in half and dry age it in two separate bags. With the bone in then the aging on the bone side is greatly slowed down to a creep.on one side. Again if it were me I’d age those two bone in pieces no less than 45 days.
