There are instructions on this forum about altering vacuum sealers. That actually got me into gear about modifying mine. Since they are all a bit different, watching the video gives you some idea where to start and what to alter. It’s a simple procedure.
The elastic netting keeps the plastic bag tight around the drying meat all the time.
