Hello, I have been using UMAI almost 2 years with great sucsess, when my product gets to the weight that I prefer I will put it into food saver vac bags. I will still leave the dry bag material on when I bag In food saver or you can take it off I have done both. I just opened a chorizo that finished in July at about 40% weight loss I have kept it in the fridge , I must say it was great! That’s 7 months taste and texture were nice. I have also put Salumi in vac bags and have frozen them. I haven’t seen much if any change in taste or texture. Just remember to work clean and cold I always use gloves and I keep everything as cold as I can. Just trust your sight and smell and taste.good luck
