Unless you hot tub your steaks then you should let them rest for up to 5 minutes and the temp will actually climb between 3 and 5°.So the answer is to pull a little before the temp you desire. The wait is not needed with hot tubbed since the internal temp is already where you want it and can be served immediately. BTW you’ll be very happy with your Thermapen as cooking to temperature instead of time is the best way!
