Great idea! Elastic netting should work just fine instead of butchers twine. That’s what elastic netting was invented for.
Got to make sure you get the right size. Sizing on elastic netting can be a bit tricky.
If you want a tight fit to give you a nice round shape you may need to devise a contraption to rack the netting onto and then shove the meat through to apply it. If you apply netting to the outside of the UMAi Dry® then be careful not to damage the seal.
