Thanks for your feedback! As you well know everybody’s tastes differ and you can tweak any recipe to your liking! You are already on the road to your “perfect” soppersotta and the great thing is YOU made it yourself! As for advice about frying a little before hand I will leave that reply to the experts here. Ron
