We usually seal it into a vacuum bag and store it in the fridge, ours is good for at least a month that way. If you freeze it in a vacuum bag, it should last a long time.
Having said that, it is really difficult to predict how long it will keep, it all depends on how dry it is, how long and at what temp the original meat was stored at, there are too many factors to list. Since everyone makes it a little different and it is not a mass produced product with consistent production parameters the length of storage will vary from person to person.
