Hi Dale, if you cook the entire slab on the grill, you will miss the seared faces of the steaks when you cook them individually, those photogenic grill marks will be absent. The Mailard reaction that happens when you sear meat creates some great flavors that people enjoy. You will of course sear the edges of the steak as they would be in contact with the grill surface.
