get the Cut Resistant Gloves! I ordered a pair off amazon, huge selection. I’m not a professional and I suggest you get the right size so you have control over the knife and primal. I cut over a inch above my knuckle and now the finger has lost strength. Better be safe than sorry.
I only use boneless subprimals, no advice on that part, sorry.
