Thanks for the incredibly quick reply. One other thing I have been wondering about is if and/or when the loin arrives and I am going to put it into the bag. Can I cut off a few (3 or 4 ) steaks to compare to the dry following the fridge time. I have read that the wet and slimy covering is to be left intact for the bag to cling to. Or can I just transfer some of the coating to the cut end to coat it before sealing.
