I fermented mine for 72 hours, but if is doesn’t turn that dark red, still put it in the fridge, maybe post a photo, but color is different depending on what was put in (spices). When I did salami, I wasn’t sure that it was a deep red until I compared my photos.

I recently had shoulder surgery but in three weeks when I can do more, I’m going to try pepperoni and I will post start to finish photos to document the progress
