Renken, welcome to the forum. Its really hard to pin down shelf life for a product that is home made. In big industrial operations they have set processes and conduct shelf life studies before determining shelf life for a given product. Obviously in a home environment you do not have the process controls that ensure the product comes out the same every time. Basically shelf life of a dry cured meat depends primarily on its moisture content, the drier it is the longer it will keep. For the most part you can store dry sausage in the fridge for a month or two. If you freeze it it will keep for several months easily. The drier it is the longer it will keep. Hope this helps.
