Pepperoni shelf life?

When my pepperoni is finished I vac pak in small portions and freeze them. When I take a pkge out of the freezer the contents go into a zip lock bag and kept in the fridge until consumed. I have found that keeping pepperoni in the fridge in a zip lock bag more than a couple of weeks affects the chewability, hence the small portions in each vac sealed bag.
