Hi Steve,
Welcome to the forum. Yes, the Manufacturer of Bactoferm recommends that it needs to be kept in the freezer to preserve its shelf life, however it can be shipped at ambient temp for short period of time 2 weeks or so max.
Not sure about hog casings, but typically those are preserved in salt and probably do not need refrigeration during shipping. I have to trust that SausageMaker knows what they are doing.
