I’d have to agree with RRP….I would go ahead and cut up the subprimal now rather than chance it ruining. Call this a lesson learned. Its tough, but gets easier… I’ve wanted to take my Waygu stuff out and take picutres/weigh/oogle them, but I’ve resisted and haven’t moved any of them yet. Next weekend I take the first strip loin out (30 days) and I can’t wait!!!
