James, I concur with the 20 to 21% lost, however once I had a 25% loss in a 60 day rib eye and a whopping 33% in a 60 day sirloin. Just the same I personally would not be in favor of stacking as you suggest as I feel air circulation is still important to prevent the possibility of bacterial growth. Ron
