Welcome aboard! When sub-primal’s are packaged in cryovac they are then frozen for shipping and ultimate sale. So unless you are buying fresh, recently butchered meat then any you typically buy retail wise will have been frozen. You could just place the frozen meat into a UMAi Dry Bag and seal it. When it thaws any moisture will be released. The only draw back of bagging when frozen hard you might puncture the UMAi Dry bag while sealing or handling it so personally I would let the sub-primal thaw in the cryovac bag first and then transfer for aging.
